Violet Extract was at one time a popular baking that was used in cakes, cookies and, frostings. Until recently, it was largely forgotten and was hard to find. As a result of the interest among consumers in floral extracts, violet has been re-discovered. Our Violet Extract, Natural WONF has a sweet, floral flavor and can be used in a wide range of baking applications including cakes, cookies and frosting. One teaspoon is sufficient for your typical cake or cookie recipe. In an industrial baking application we recommend a starting use level of at 0.30% by weight of the dry ingredients.
