Acai berry is the fruit from the acai palm, which is native to the northern part of South America. The berries are often described as having a combination raspberry and grape flavor. This flavor can be used in ice cream and a wide range of frozen novelties. We recommend a starting use level of 0.60%, or 0.86 ounce per gallon (144 ounces) ice cream base.
