Mandarin Italian Extract, Natural (Tardivo Di Ciaculli Varietal) (New Product)

There are a number of varieties of mandarin that grow in Southern Italy. These are often mixed when the fruit is harvested and processed to recover juice and oil. This extract is made exclusively from the exquisite Tardivo Di Ciaculli varietal of Mandarin. It is ideal for a wide range of frozen dessert applications especially gelato. We recommend a starting use level of 0.50%, or 0.72 ounce per gallon (144 ounces) of ice cream base.
